Questions from my brain today

Three things I have wondered today:

1. How do uneducated, poor people who have children with medical issues or special needs survive the endless paperwork, insurance denials, and collection agencies? It's hard enough for a middle-class family where both parents have master's degrees. Sheesh.

2. How exactly does an omelet work? How does the egg on the inside cook? Time? Low heat? I always just give up after I fold it and chop it into scrambled eggs.

3. Why can't I eat scrambled eggs, peanut butter sandwiches, or Oreos without milk?

4. Anyone got any Oreos?

3) Because that is how God intended it.

My only answer for your first questions is God. I was about to begin my first year of college and Brandon was a senior in high school when Raeleigh was born. I had to take classes online b/c of her heart and he went to school and worked 2 jobs. Four years and a bachelor's degree later I still don't know how we did it. I just know I stayed faithful through it all and God never gave me more than I could handle.

1. They don't survive. Their children receive subpar service and it is sad.

2. Low heat and cook it like a pancake. Once it is firming (but not totally done), then put your meat/cheese/veggies inside and fold it over until the cheese melts.

3. I don't know. Try drinking water. :P

4. Yum. Nope.

1. They don't. That's why the infant and child mortality rate in low income families is higher. It's very sad.

2. Cook it on med/low, sliding your spatula under the edges until it can kind of glide around in the pan. Then flip it and while the other side is cooking, load in your cheese, meats, whatever. Then fold and eat.

3. Ew, hate milk.

I feel the same about omelets.

I have never made a decent omelet, but scrambled eggs are my forte. You must try oreos dipped in peanut butter when you get some splurge points. No. I don't have any b/c when they were the penny item at publix I ate the entire box in one week :(.

1. I don't know. But they really should simplify some things. I don't have a masters, but I consider myself fairly intelligent, and paperwork confuses the heck out of me!

2. I hate omelets. I refuse to learn how to make them because they're just gross. I've tried many times and like you, have just chopped it up.

3. Because you shouldn't. Milk makes those things taste better. Eating those things without milk would be like having cereal with no milk imo!

4. I WISH!!! Oreos are my fav. But if you want to travel all this way to see us, I will happily buy you some. Heck, I'll go get you an Oreo McFlurry too. ;)

I totally agree with #1. In fact, I work with kids in the inner-city, and most of them NEVER go to the doctor or dentist for this very reason. So I cannot imagine what they would do with something like your sweet baby.

I just found your blog and I'm looking forward to reading more. And I'm praying for you guys!

1 - what Heather said... exactly. I've thought of this often as well. Some organizations simply do "case management" for families and this helps... but heck you still have to navigate the system to get that!

2 - What others said about the omelet but I have one other thing to add.... steam. So once the base starts to get firm, lift up the edges of the omlet with a spatula and put a few spoons full of water in there (You'll want the heat medium for this part). Then cover... it steams the top part of the eggs rather than waiting for the bottom to cook through to the top. Honestly I HATE eggs that are browned at all so steaming is the best solution for me. Then as it's mostly firm (you'll want to cook of most if not all the excess water) add the stuffin and fold over. I think I learned this on some cooking show years ago.... yep, steamed omlets. Let me know if you try it.

3 - Again I'm with Heather... hate milk. Actually allergic to it somewhat so I haven't had a glass of milk since 4th grade. Not much help there I guess.

4 - no oreos but I have keebler wafer cookies... YUM!

1. not very easily trust me i grew up in a house with six kids and low income even without special needs our medical bills were astronomical even now out of force of habit from what i learned as a kid I wont go to the doctor unless i am half dead or cant stop bleeding

2. no clue i can't stand omelets because i can't stand eggs made with water ( love scrambled eggs made with milk though )

3. because you just can't milk helps you swallow the food and it makes it taste better

4. no sorry though i would like some if you happen to get any.
